Why your vegetables are getting unheathier

A 2004 study of fruit and veg found that nutrients like protein, calcium, iron and vitamin C had significantly declined in crops since 1950.

This is blamed on farmers selecting crops for higher yields and choosing those that are more pest resistant.
Those are all true…

But, worryingly, some scientists think there is another factor…

Rising global temperatures and rising carbon dioxide levels are also lowering the amounts of nutrients in crops. 

Scientist Irakli Loladze says, “Every leaf and every grass blade on earth makes more and more sugars as CO2 levels keep rising… we are witnessing the greatest injection of carbohydrates into the biosphere in human history―[an] injection that dilutes other nutrients in our food supply.”
